Balsamic Rosemary Pork Loin with Roasted Potatoes



Balsamic Rosemary Pork Loin with Roasted Potatoes will take your dinner to the next level. The pork loin is marinated in a mixture of balsamic vinegar and rosemary. It is then roasted to perfection with baby potatoes that are golden and crispy.

Ingredients:

  • 2 lbs pork loin
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • Salt and pepper to taste

  • 2 tablespoons melted butter

Instructions:

Preheat the oven to 375F 190C

In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped rosemary, salt, and pepper

This creates the marinade for the pork loin

Place the pork loin in a resealable plastic bag and pour half of the marinade over it

Seal the bag, ensuring the pork is well-coated, and let it marinate in the refrigerator for at least 30 minutes

In the meantime, toss the halved baby potatoes with melted butter, remaining marinade, salt, and pepper

Spread them on a baking sheet in a single layer

Remove the marinated pork loin from the refrigerator and place it on the same baking sheet with the potatoes

Roast in the preheated oven for about 45-50 minutes or until the internal temperature of the pork reaches 145F 63C

Ensure the potatoes are golden and crispy

Once cooked, let the pork rest for a few minutes before slicing

Garnish with fresh rosemary sprigs
