Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 4 cups fat-free chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas
- 1 cup fat-free milk
- 2 tbsp cornstarch
- 1 cup all-purpose flour
- 1
- 5 tsp baking powder
- 1/2 tsp salt
- 1/2 cup fat-free buttermilk
Instructions:
Diced chicken, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper should all be put in the pressure cooker
Put the lid back on the pressure cooker and turn it on to high pressure
Bring it to a boil
When the food is done, manually let the pressure out and open the lid
Add 2 tablespoons of water to a small bowl and mix the cornstarch to make a slurry
Put the slurry into the pressure cooker and mix it around well
Feel free to add fat-free milk and frozen peas to the pressure cooker
For 5 minutes, stir it and let it cook
Mix the flour, baking powder, salt, and buttermilk in a different bowl using a whisk to make a dough
With spoons, add chunks of the dough on top of the chicken mixture in the pressure cooker
The dumplings should be fully cooked after 5 minutes of cooking on high pressure
The lid should then be closed again
