The flavors of these Grilled Chili Honey Lime Chicken Thighs are great together because they are sweet, spicy, and sour. The marinade gives the chicken a tasty glaze while it's cooking, making a dish that will make everyone's mouth water at your barbecue.
Ingredients:
- 6 bone-in, skin-on chicken thighs
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cayenne pepper
- Juice of 2 limes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
In a bowl, whisk together honey, soy sauce, olive oil, minced garlic, chili powder, cayenne pepper, lime juice, salt, and pepper
Place chicken thighs in a resealable plastic bag and pour half of the marinade over them
Seal the bag and refrigerate for at least 30 minutes, or overnight for best results
Preheat the grill to medium-high heat
Remove chicken from the marinade and discard the used marinade
Grill chicken thighs for 6-8 minutes per side or until they reach an internal temperature of 165F 74C and have a nice char
Baste the chicken with the remaining marinade during the last few minutes of grilling
Remove from the grill and let the chicken rest for a few minutes before serving
Garnish with fresh cilantro and serve hot
