Quick Spinach Risotto



This Quick Spinach Risotto is a low-carb version of regular risotto that would be great for an Easter meal that is keto-friendly. It tastes great, is creamy, and is full of healthy spinach.

Ingredients:

  • 2 cups cauliflower rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

Warm up the olive oil in a big pan over medium-low heat

Mix in the garlic and cook until it smells good

Add the cauliflower rice and cook for another two to three minutes

Add the chicken broth and keep stirring until it is all absorbed

Add the spinach little by little and let it wilt

Add the heavy cream and Parmesan cheese and mix them in well

Add pepper and salt to taste

Add two to three more minutes of cooking time until everything is hot

Enjoy while hot!
