Chocolate Truffle Energy Bites



You can satisfy your sweet tooth with these chocolate truffle energy bites, which are both tasty and good for you. You can eat them raw, vegan, and gluten-free. They are full of dates, nuts, and cocoa powder.

Ingredients:

  • 1 cup dates, pitted
  • 1/2 cup raw almonds
  • 1/4 cup raw cashews
  • 1/4 cup cocoa powder
  • 1/4 cup shredded coconut
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

Using a food processor, mix together cocoa powder, shredded coconut, chia seeds, vanilla extract, and salt

Add the dates and process until a sticky dough forms

Make little balls out of the dough, about 1 tablespoon each, and put them on a baking sheet lined with parchment paper

If you want to add more flavor, you can roll the balls in extra shredded coconut or cocoa powder

Put it in the fridge for at least 30 minutes to make it firm

Serve and have fun! Put leftovers in a container that won't let air in and put it in the fridge for up to a week
