Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup granulated sugar
- 2/3 cup extra virgin olive oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup hot water
- 1/2 cup semisweet chocolate chips
- Powdered sugar for dusting optional
Instructions:
Preheat your oven to 350F 175C
Grease and flour a 9-inch round cake pan
In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt
In another bowl, beat the granulated sugar, olive oil, eggs, and vanilla extract until well combined
Add the dry ingredients to the wet ingredients in batches, alternating with buttermilk, starting and ending with the dry ingredients
Mix until just combined
Stir in the hot water until the batter is smooth, and then fold in the chocolate chips
Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack
Dust the cooled cake with powdered sugar if desired, slice, and enjoy!
